A recipe has no Soul. You, as the cook, must bring Soul to the recipe. ~ Thomas Keller
Chef Dave Pow
That’s exactly what Chef Dave does. The dishes he prepares for his guests reflect his passions and journey to Annapolis, MD.
Chef Dave was born and raised in the greater Boston area. He attended Hobart College in Upstate New York and earned a BA in Psychology. But that did not satisfy his Soul. His love of food and cooking led him to study at the Culinary Institute of America.
Over the next 16 years, Chef Dave cut his chops in the kitchens of Memphis and Washington, DC, blending his French cuisine training with his passion for the flavors and specialties of New England, the Eastern Shore and Southern Cuisine.
Dave moved to Annapolis in 2006 to be closer to his family, the Soul of his life. In 2012, he opened the Blue Rooster Cafe providing Local Eats to the community of Cape St. Claire, MD. These experiences have defined the Soul of Dave’s cooking style.
General Manager Trevor Hayman
Trevor discovered hospitality was in his Soul at the age of 18 while working as a bellman at the Inn at Perry Cabin. After working his way through the entire hotel, he landed in the Food and Beverage Department and found his true love for food and wine. Trevor moved to Hawaii in 2007 where he Soul-searched for the perfect restaurant job, serving as general manager and taking his Sommelier exams.
But Maryland was in his Soul so he came back home, where he found a kindred Soul in Chef Dave Pow.
